This white wine grape variety is synonymous with New Zealand wine, and is characterized by a clean acidity and refreshing aromas of citrus fruits and herbs.
In cooler climates, the lush herbs stand out, while in warmer climates, the aromas of passion fruit and grapefruit are prominent. Most are made from a single variety, but in the Bordeaux region of France, they are blended with Semillon.
Sauvignon Blanc accounts for 75.8% of New Zealand's total production (2019)
