"Late Harvest" refers to sweet wine made from late-harvested grapes.
First, the grape harvest is delayed as long as possible. This allows the moisture to escape, concentrating the sweetness and flavor, resulting in a very high sugar content in the grapes.
The juice from these grapes with a high sugar content is used for alcoholic fermentation, but the characteristic of this process is that it leaves plenty of grape sugar remaining (i.e. a sweet wine).
Late Harvest wines, which are particularly well-suited to aromatic white grape varieties such as Riesling and Gewürztraminer, are produced all over the world.
Many of them have a strong umami flavor and a smooth texture.
