The process of removing (pulling) the sediment in wine after fermentation from the clear, clear liquid on top is called "raking."
The steps for racking are as follows:
- After alcoholic fermentation is complete, the wine is poured from the tank into a separate container.
- The sediment remaining at the bottom is removed using a special tool.
This process may be repeated several times depending on the situation. Repeated racking increases the clarity of the wine on top.
In French it is called soutirage, and in English it is called racking.
