We are continuing to renovate Bokumo.
There was one thing that bothered me a little.
The reason is that there are some items that are still usable but cannot be placed in the store after the renovation .
When I think back to when I first started my shop, I spent a lot of time buying all the equipment I needed. Shelves, tableware, cutlery, mirrors, audio equipment. I remember having a lot of fun deciding what items to put in the store, going round tool shops, second-hand shops, and browsing the internet.
However, I thought I could take my time to make a decision, and before I knew it, the red opening date on the calendar was just around the corner, and I vividly remember the sense of anxiety I felt.
Oh no, I have to buy it now to make it in time for the store opening. But is this really the right one? Isn't there something better? Isn't it expensive compared to the market price? No, it's no good, if I hesitate, I won't make it in time. Oh well, let's just buy it!
A prime example of something I bought this way was wine glasses. When I first started the store, I didn't have a sommelier license and didn't have much knowledge about wine, so I just followed the recommendations of the store staff and chose them on impulse.
Looking back now, I realize that, "Oh no!"
The reason is that while I will take good care of things that I have carefully selected, I feel like I don't show enough love to things that are just cheap.
In fact, the first 60 wine glasses I bought were all chosen to be shatter-resistant, but now, more than 12 years later, only about 10 remain.
Well, I suppose it can't be helped since glasses are consumable items, but I can't help but think that if I had chosen them with a little more care, I might have handled them more carefully.
In contrast, the chairs were something we took a lot of time to choose.
I ordered catalogs from various manufacturers and visited showrooms, agonizing over which one to buy. Then I bought a few and tried them out at home to see how comfortable they were, and finally decided that this was it.
My preference is to make the chairs a little taller than usual. Usually, the chairs at restaurants are 40cm to 45cm high, but I chose a 50cm chair. Accordingly, I made the table a little taller than usual.
The reason is that I thought that by making it a little higher than the theory, it would create a slightly unsettled feeling, or something like a sense of discomfort. And I thought that this would lead to livening up the store.
Yes. The original concept was not to have a place where you could sit and enjoy your wine glass, but to have a place where you could stand up and have a good time. So I wanted chairs that were easy to stand up from. It's only 5cm, but when you compare the different seats, it feels quite different.
Luckily, things turned out as planned. We happened to ride on the wine boom that hit about 10 years ago, and Bokumo became a place where people could drink wine quite loudly.
However, this time, the renovation is trying to break away from that initial concept. Now in its 13th year, Bokumo has a more adult atmosphere. The furniture will also be renewed to have a more subdued feel.
So, the problem is the item that is still usable but cannot be placed in the store after the refurbishment - the chairs .
Since it is for commercial use, the seat is still in good condition. It has not worn out. The legs are a little scratched, but it does not feel wobbly. It has worked hard, but it is still able to work. It is a good chair.
I'm still attached to it, but I have to let it go. I was thinking, "What about my husband's family? I guess I can just take my time and think about it," when suddenly, hey, it's only a little while until the red circle on the calendar for the reopening. Hey, Iwasu, you haven't grown at all since then!
So, I'd like to use this blog to make a small appeal.
Is there anyone out there who would like to have a Bokumo chair?

Lily has been active for 12 years, so please give her some love if you like!
If there is no one who wants it,
Throw it away...
No, it would be a shame. I'm attached to it.
My house will probably be covered in chairs.

Thankfully, all of the chairs had their homes decided within half a day of the announcement!
The second chair student is going to be loved very much!!!
This week's pairing
These are the new menu items planned for Bokumo after the renovation.
Boom.

This is an evolution of the chicken liver paste that the chef used to make.
This new version has orange peel as an accent. The fruity flavor has been softened, making it a great match with fruity New Zealand wines.
Can go with both white and red wine.
If it's white...
Misha's Vineyards "The Starlet" Sauvignon Blanc 2019

The orange peel pairs well with the citrus flavor of the wine.
If it's red...
Wildsong Organic Syrah Hawke's Bay 2018

The animal and spicy notes in this elegant Syrah make it the perfect pairing with liver.
Oh, I hope you'll try it out soon.
The reopening is currently scheduled for the second week of March. Go away, Omicron!
