Renovations are fun

The Bokumo Wine website has been renewed.

It's only been six months since I started?

You may be thinking that, but I decided that it's better to do this sooner rather than later.

For example, I started with a guitar that came with a case and a mini amp, recommended by an old man at a music store, but after playing it for half a year, I realized that it was no good. The sound was terrible. If I was serious about going pro, I should have gotten myself together and bought a Fender or something. If I was going to practice every day, I should have a world-class squealing sound. So I thought I should buy a Strat and make up my mind.

...This may not be completely clear, but ultimately, I wanted to make any adjustments I could to correct course early on so that our store will remain beloved for a long time to come.

With this renewal, we have upgraded many aspects at once, including the site structure and cart system.

The work in the back office has also become much more efficient, so I think I can devote more time to thinking, "Maybe if I do it this way, customers will be pleased?"

Good good.

Speaking of renewal, I've always loved observing renewals.

I remember Nagoya Airport. I was shocked by its renovation.

When the airport's main functions were transferred to Centrair, Nagoya Airport was renamed "Prefectural Nagoya Airport." At that time, a dramatic renovation was carried out, with a shopping center opening up in the area that had once been the international terminal.

When I actually went there,

"Wow! When I was younger and traveling abroad, the terminal where I used to anxiously wait to board has now been turned into a food court! I can't believe it's been renovated like this. It's so interesting!"

(Since the airport is in the local area, I couldn't help but use the local language.)

Maybe I like it when a place I've known for a long time undergoes renovation and undergoes interesting changes. It makes me feel like I'm watching a story.

One more thing.

Before starting my own restaurant, I worked part-time at an Italian restaurant and was very grateful to the chef there, who really loves to renew things.

First, we moved to Marunouchi. Then, we moved to Nagoya Station. Then, we moved to Tsurumai. Every few years, we moved the shop and renewed it.

Watching from the sidelines, I have so much fun.

Because you can see the restaurant run by the same person evolving little by little. It's like watching a documentary of the chef's trial and error. It's really interesting.

Of course, renewal cannot be done without the desire to move in a positive direction and make improvements .

I don't know if I'll succeed or fail. But I can't just stay where I am. I want to change my previous state and take a step forward. I think it's because I have that kind of energy that I can do it. I think it's great that I'm moving forward with the determination to go for it!

Bokumo Wine still has a lot of energy, so we plan to continue renewing it in detail, not just from now on. I hope that one day, someone will think, "That story is so interesting!"

Oh, that's right.

We are also giving our currently closed wine bar "Bokumo" a small makeover. We have been operating for over 12 years without moving or undergoing any major makeovers, but we have always had a burning desire to make the bar better. This time, we think this will probably be our last COVID-19 closure, so we are going to use this last closure to give the interior a little makeover. We will report back here on how it goes.

By the way, the Italian restaurant mentioned above recently moved and renovated again to Tajimi City, Gifu Prefecture, the chef's hometown. How many renovations have they done?! Lol

This time, the pizza oven has been upgraded to a wood-fired oven imported from Naples, and a parking lot has been added, making it a restaurant that families can enjoy as well (I haven't been there yet. I want to go soon).

What about guitars? After changing over to three electric guitars, I decided that this was the one, and settled on a nice acoustic guitar from Yairi. It's connected to Gifu. Sorry if I'm trying too hard to make this a guitar story.

This week's pairing

Since it's that time of year, a little bit about pairing chocolate and wine.

A few years ago, we held an event at Bokumo where we offered six types of wine and six types of chocolate, allowing people to experience a total of 36 different food combinations.

Everyone was pretty drunk when they tried the pairings, and in the end, the wine that received the most votes for "the best wine for chocolate" was...

"Sparkling wine"

and

"sweet wine"

is.

However, chocolate with a strong bitter taste tends to be difficult to pair with either sparkling or sweet chocolate.

Popular chocolates that go well with wine include "chocolate with orange peel," "chocolate with nuts," and "white chocolate."

The chocolate with orange peel brings out the fruity flavor of the wine.

If you drink wine after eating chocolate with nuts, the nutty aroma is revived and is very pleasant.

White chocolate has a high milk fat content, so it goes very well with wine. Red, white, sparkling, rosé, sweet, any kind of wine works well.

Personally, I think the best pairing is orange peel and sparkling wine .
