Chablis-esque Waitaki Chardonnay

For Chablis lovers

The first time I tasted this wine, I was quite surprised. I had never encountered a wine from NZ that was so close to Chablis, with such a crisp, dignified character.

What I personally appreciate about Chablis is its "straightforwardness, concealing a resolute, dignified presence." I've fallen in love with its quiet presence countless times.

And I experienced that same emotion in the South Island of New Zealand!

It's a bit pricey. But if you're both a "Chablis fan" and an "NZ fan," I highly recommend savoring this unique character. It's sure to move you!

Why it's called "NZ's Chablis"

The elements that define Chablis' character are its unique soil, cool climate, and the Chardonnay grape variety.

While New Zealand's Waitaki Valley does not have the exact Kimmeridgian marl of Chablis, it shares the presence of limestone and marl.

Furthermore, it boasts an extremely cool climate, with 30% fewer growing degree days than its neighbor, Central Otago.

This combination yields a Chardonnay with a distinctive, crisp nuance.

Renowned Master of Wine Bob Campbell once commented on Waitaki Chardonnay, citing instances where he felt it "surpassed Premier Cru Chablis."

About the region: Waitaki Valley

The Waitaki Valley is a relatively new wine region located in North Otago, on the South Island of New Zealand. The first vintage was in 2004. It's a valley region further northeast from Central Otago, in an inland area close to the Pacific Ocean.

While it has a dry climate, protected by the rain shadow of the Southern Alps, nighttime temperatures drop significantly, leading to slow grape ripening.

Chardonnay from Waitaki is harvested late, often in May. This long "hang time" contributes to the wine's concentrated flavors and high acidity.

It can be said that this region possesses a distinctly different character from the well-known Central Otago.

About the vineyard

Valli's Waitaki vineyard is comprised of fruit from several neighboring growers. The vines are 12 years old, with a planting density of 4,167 vines/ha. Harvesting is done by hand each year from late April to May.

Winemaking

Whole bunches are pressed. After homogenization of the pressed juice, it is transferred directly to French oak barrels (23% new oak). Barrel fermentation with high solids creates complex aromas.

Weekly bâtonnage is performed until malolactic fermentation, followed by 11 months of aging. The wine is bottled unfined and unfiltered. Total production is extremely small.

Natural sediment may occur.

 

Tasting Notes

The color is a bright green-gold, with a clear, luminous shine.

The aroma features lemon juice, green apple, candied zest, and unique savory notes derived from high-solids fermentation. With time, nuances of hazelnut emerge from the background.

On the palate, a firm mid-palate texture and acidity harmonize, with a long, salty finish. It is creamy yet not heavy. Intensity and delicacy coexist, with pure fruit at its core.

The ideal serving temperature is 10-12℃. It can be enjoyed now but has a potential for aging of over 12 years.

Recommended Pairings

Pairing with seafood further enhances the experience. Crab, shrimp, oysters, and scallops show excellent compatibility.

For crustaceans and shellfish, try grilled snow crab or pan-fried scallops (with butter sauce). The wine's salinity and creamy texture perfectly complement the umami of the crab and shellfish.

For rich seafood, try tempura of cod milt. The rich umami and the wine's minerality intertwine.

For Japanese cuisine, try yellowtail grilled with salt koji. The balance of fermented umami and acidity creates an interesting pairing.

About Valli Vineyards

Valli Wines was founded in 1998 by legendary New Zealand winemaker Grant Taylor. The winery is named in honor of his great-grandfather, Giuseppe Valli, who immigrated from Italy.

At the heart of their winemaking philosophy is "capturing the essence of the land in every bottle." They convey through wine the fascinating way in which the taste of the same grape variety can change dramatically depending on where it grows (climate and soil).

Valli's greatest strength lies in the collaboration of two world-class winemakers.

Grant Taylor (Founder)

A pioneer representing New Zealand. He is the only legendary winemaker in the world to have won the unprecedented "Best Pinot Noir Award" four times at international competitions in London.

Jen Parr (Co-Winemaker)

A highly skilled winemaker who joined in 2015. Originally from the US, she has extensive experience both domestically and internationally, and is a brilliant talent who has been recognized with New Zealand's "Winemaker of the Year Award."

Four Vineyards with Distinct Personalities

Valli primarily produces Pinot Noir, the king of red wines, as well as white wines like Chardonnay, Pinot Gris, and Riesling. The four regions (vineyards) they cultivate each possess entirely different characteristics.

Gibbston

Characteristics

This is the coolest area, where grapes ripen most slowly.

Flavor

Slow ripening leads to elegant, refined, complex, and delicate flavors. Unusual "orange wines" are also produced here.

Bannockburn

Characteristics

Though only 20km from Gibbston, it's a warmer area.

Flavor

The wines are dark in color, with powerful fruit flavors and a moderate astringency that provides structure, resulting in a robust wine.

Bendigo

Characteristics

This is a warm vineyard with constant sun exposure and good heat retention.

Flavor

Characterized by rich, full-bodied, and voluminous flavors, often described as a "friendly beast."

Waitaki

Characteristics

A new region that began in 2004. The soil is "limestone," similar to that of Burgundy, a prestigious French region.

Flavor

Characterized by a gorgeous, perfume-like aroma, crisp, clear acidity, and minerality. The Chardonnay, in particular, is considered exquisite.

Valli Wines is a winery born from the fusion of New Zealand's magnificent nature and the exceptional skill of two artisans.

Even without difficult technical knowledge, the greatest charm is being able to clearly experience the difference in the land's characteristics (terroir) simply by "comparing wines from different vineyards." About the Waitaki Valley Region

The Waitaki Valley is situated 40km from the Pacific Ocean, featuring a distinctive landscape surrounded by mountains.

This region spans approximately 20km along the Waitaki River, with its north-facing slopes being highly suitable for grape cultivation. Furthermore, the climate conditions are similar to those of Central Otago.

A particularly noteworthy aspect is its unique soil composition. Well-drained high river gravels and ancient limestone layers are deposited alternately, which imparts unique flavors to the wines of this region.

Waitaki Valley wines retain the typical characteristics of the Otago region, but the distinctive terroir of this area is reflected in the wines, giving them their own unique personality.
