A pure fruit flavor that permeates the air
The most "honest Pinot" of "Terra Sancta"
Pinot Noir is delicate, complex and a bit finicky, and the Pinots from Central Otago's renowned Terra Sancta are sometimes smoky, sometimes forest-like and layered.
Among them, this "Mysterious Diggings" is a Pinot that gives a relatively light, straightforward, and smooth impression. It is an "approachable bottle" that makes you say "It's delicious" from the moment you open it.
Where they once mined gold, they now mine pinot
The fields are located in the Bannockburn region of Central Otago, an area that was once bustling during the gold rush, with remnants of gold mining sites still visible here and there.
When the children saw the scene, they named it "Mysterious Diggings," and Terra Sancta adopted that name for the field.
Now that much time has passed since the Gold Rush, this land could be said to be a place where the treasure called grapes can be found instead of gold.
Lightness and transparency born from the sandy fields at an altitude of 300m
The Mysterious Diggings vineyard is located at an altitude of 300m, on a steep north-facing slope, and has distinctive sandy soil .
This sandy soil has excellent drainage and low water retention, allowing the vines to sink their roots deep and slowly absorb nutrients as they grow.
The resulting Pinot Noir has bright fruitiness, clean acidity, snow-soft tannins, and a smooth finish.
Violets, red fruits, and spices like star anise. It is gorgeous, yet somehow innocent.
2023 vintage: gentle fruit power
2023 began with frost and had some turbulent weather. However, by taking thorough care of the fields, the fruit was well ripened at harvest time.
Harvested from late March to early May, the grapes slowly ripen over a period of time, giving this wine a gentle, calming energy .
Brewing is about "valuing the naturalness"
This Pinot Noir is also finished with a natural approach that is typical of Terra Sancta.

- Aged in neutral French oak barrels (minimal barrel aroma)
- Organic, low-intervention design
The winemaker keeps a watchful eye over the wine, which is why the character of the vineyard is reflected in the glass.
Tasting: A taste that can honestly be described as "delicious."
The color is a slightly light ruby, and the aroma is cherry, boysenberry, violet, lavender, and a hint of star anise.
The taste is very smooth, with a good balance of fruit sweetness and acidity, and the tannins are light and gentle. The aftertaste is fresh berry and a quiet spice .
It can be described as a Pinot that allows you to enjoy its pure deliciousness.
Pairing: Light but aromatic and deep dishes
This Pinot pairs perfectly with light, aromatic dishes. When paired with dishes that emphasize the natural flavor of the ingredients or dishes with a hint of spice, the wine's brilliance and clarity are further enhanced.
Here are some recommended combinations:
- Roasted duck with yuzu pepper sauce → The delicious flavor of the duck and the aroma of yuzu blend beautifully with the red fruits and spices of the wine.
- Grilled eggplant and ginger marinated in white dashi stock → The aroma and flavor of the dashi stock go well with the delicate fruitiness of Pinot.
- Mi-cuit salmon with beetroot and dill sauce → The smoothness of the semi-cooked salmon is a perfect match with the texture of the Pinot

About the Winery "Terra Sancta"
Terra Sancta is Central Otago's fourth established winery.
Founders Sarah Elliott and Mark Weldon recognised that each of their four vineyards, including Sancta, first planted in 1988, had different soil and site characteristics and the potential to produce excellent wine.
The current head brewer is Andrew Keenlyside, who has experience working in California and New Zealand.
Bannockburn, where Terra Sancta is located, is the only GI in Central Otago. The climate is as dry as a desert, allowing the grapes to ripen healthily while retaining their acidity. The north-facing vineyards and three mountain ranges also provide an ideal environment for grape growing.
The signature Sancta Vineyard was established in 1991 and is Bannockburn's first vineyard. The site and conditions of this vineyard are excellent, producing complex wines that can be aged for a long time.
Their wines have received acclaim from notable critics such as Bob Campbell and James Suckling.
About Central Otago
Central Otago, the southernmost region in the country, is known as a famous Pinot Noir producing area and is called one of the "three major Pinot Noir producing areas in the world" along with Burgundy and Oregon.
In addition to Pinot Noir, we are focusing on growing aromatic white grapes. This region is the only one of New Zealand's wine producing regions with a semi-continental climate, characterized by large daily temperature differences, coolness, and extreme dryness.
The region is also home to a wealth of small wineries, and winery tours based in the scenic town of Queenstown are popular.
