Created by Japanese winemaker Kohei Koyama, Pét-Nat-Pétillant Naturel is a lightly sparkling natural wine fermented with wild yeast and with bubbles trapped in the bottle.
The name of the block of vineyard where 80% Pinot Noir and 20% Pinot Gris are planted. At the right time of harvest, both Pinot Noir and Pinot Gris are hand-picked at once. After destemming, the two types of grapes are pressed together to obtain the juice.
Once the wild yeast has fermented the wine to a certain extent, it is bottled and the remaining fermentation takes place in the bottle. Being an ancestral wine, the wine is slightly cloudy and has some sediment remaining in the bottle.
If you enjoy a creamy taste, you can turn the bottle upside down to mix with the lees, or if you prefer a clean taste, let it sit and then pour slowly.
The aroma is gorgeous, reminiscent of strawberries and brioche. It has a fruity yet dry finish, making it suitable for a wide range of meals.

About the Green Songs Winery
Green Songs is a winery run by Japanese winemaker Kohei Koyama.
After working in the business world in Tokyo and London, Kohei moved to New Zealand in 2011 to pursue a career in winemaking.
He studied grape cultivation and winemaking at Lincoln University, becoming the first Japanese to graduate with honors. He then studied winemaking in New Zealand and California, and in 2014 he partnered with Atamai Village in the Nelson region to open his own winery.
Atamai Village is a joint venture of orchards and farms run by people with the common goal of living a life that places as little strain on the global environment as possible.
Kohei is also the head vineyard and brewer at URLAR, a winery in Gladstone, Wairarapa. URLAR is owned by Nishi Yoichiro, the eighth-generation owner of Nishi Sake Brewery in Kagoshima Prefecture.
Currently, Kohei is mainly active with Gladstone, and is expanding the range of his winemaking by further enhancing the Green Songs lineup. We look forward to seeing his future success.
About the Wairarapa region
Wairarapa is located in the southeastern part of New Zealand's North Island, and is a popular resort area with easy access, just about an hour's drive from the capital, Wellington.
The Martinborough subregion in this region has climate and soil conditions very similar to those of Burgundy in France, and is known as one of the world's top producers of Pinot Noir.
