Green Songs Pet Nat The Cliffs 2021

Crafted by Japanese winemaker Kohei Koyama. Pet-Nat, or Pétillant Naturel, is a lightly sparkling natural wine made by fermenting with wild yeast and trapping the bubbles in the bottle.

This is named after the vineyard block where 80% Pinot Noir and 20% Pinot Gris are planted. Timing the harvest carefully, both the Pinot Noir and Pinot Gris are hand-picked simultaneously. After destemming, the two varieties are pressed together to obtain the juice.

Once the alcoholic fermentation has progressed to a certain point using wild yeast, it is bottled, and the remaining fermentation takes place inside the bottle. Since it is made using the ancestral method (méthode ancestrale)—a traditional, rustic approach without disgorgement—the wine is slightly cloudy and retains sediment in the bottle.

If you prefer a creamier texture, you may turn the bottle upside down to mix the sediment. If you prefer a cleaner taste, keep the bottle upright and pour gently.

The aroma has a gorgeous quality reminiscent of strawberries and brioche. While fruity, it has a dry finish, making it a versatile pairing for a wide range of dishes.

About Green Songs Winery

"Green Songs" is a winery run by Japanese winemaker Kohei Koyama.

After a successful business career in Tokyo and London, Kohei moved to New Zealand in 2011 with the goal of making wine.

He studied viticulture and enology at Lincoln University, graduating at the top of his class—the first Japanese person to do so. He subsequently gained practical winemaking experience in New Zealand and California, and in 2014, he finally established his own winery in partnership with Atamai Village in the Nelson region.

Atamai Village is operated collectively as an orchard and farm, with the shared goal of living a life that places as little burden on the Earth's environment as possible.

Kohei is also the head of viticulture and winemaking at a winery called "URLAR" in Gladstone, Wairarapa. "URLAR" is owned by Yoichiro Nishi, the 8th generation head of Nishi Shuzo in Kagoshima Prefecture.

Currently, Kohei focuses his activities around Gladstone, where he continues to expand the Green Songs lineup and broaden the scope of his winemaking. We look forward to his future achievements.

About the Wairarapa Region

"Wairarapa" is located in the southeastern part of New Zealand's North Island. Thanks to its easy access, being only about an hour's drive from the capital, Wellington, it is a popular resort destination.

The sub-region of "Martinborough" in this area is known for its climate and soil conditions, which are very similar to those of "Burgundy" in France, and it is recognized as one of the world's top Pinot Noir production areas.
