Prophet's Rock is a winery established in Central Otago in 1999. They make wines with a focus on sustainability, such as using no fertilizer and fermenting only with natural yeast. Winemaker Paul Pujol has been described by critic Jancis Robinson MW as "a talented winemaker who will one day lead the world of wine."
