Dry and Distinguished "Mineral Pinot Gris"

The limestone-covered Waitaki Valley in North Otago is a rare chalk-based soil region in New Zealand. It possesses a distinct character, clearly different from the wines of the famous Central Otago region next door.

This Waitaki Pinot Gris is completely dry, with residual sugar under 2g/l. It has none of the sweetness or heaviness often found in NZ Pinot Gris, instead offering a crisp minerality and a moist texture.

A hint of salinity on the finish invites culinary pairings.

About the Vineyard

From a vineyard in the very small region of North Otago, Waitaki Valley. Planted in 2015, it has a high planting density of 5,000 vines/ha, and blends fruit from several nearby vineyards depending on the vintage.

The soil is limestone, said to be geologically similar to Burgundy in France, and imparts a completely different type of minerality to the wine compared to Central Otago, even though they are both in NZ.

Winemaking Process

Harvested bunches are hand-picked and gently pressed whole-bunch to avoid extracting astringency from the skins.

After pressing, the entire volume is fermented in neutral French oak barrels; no stainless steel tanks are used. Fermentation proceeds slowly, with partial malolactic fermentation, followed by 6 months of aging sur lie (on the lees). This process contributes to the wine's silky texture. It is finished dry (residual sugar <2g/l).

Total production is extremely limited at 524 cases.

Tasting Notes

Pale golden color. Transparent, giving a clean impression.

Aromas of lemon zest, lime, pear, basil, and a hint of the sea. Complex yet somehow refreshing.

On the palate, crisp pear, citrus, and ripe green apple fruit notes unfold. Supported by elegant acidity, with a subtle salinity on the finish.

Drinkable young, this wine possesses both power and charm.

The ideal serving temperature is 10-12℃. Please allow it to sit for a short while after taking it out of the refrigerator.

Recommended Pairings

Excellent with seafood dishes where the saltiness and minerality can shine.

For seafood, pan-seared white fish with lemon butter sauce, or seared scallops and asparagus. The wine's citrus and minerality pair harmoniously.

For meat/fermented dishes, grilled pork fillet marinated in miso. The umami of fermented miso and the silky texture from the barrel naturally intertwine.

For cheese, chevre (goat cheese). The wine's salinity and the white mold flavors complement each other well.

About Valli Vineyards

Valli Wine was established in 1998 by New Zealand's legendary winemaker, Grant Taylor. The winery is named in homage to his great-grandfather, Giuseppe Valli, who immigrated from Italy.

At the heart of their winemaking philosophy is "bottling the true essence of the land." They aim to convey through their wines the fascinating fact that even the same grape variety can taste remarkably different depending on its growing location (climate and soil).

Grant Taylor (Founder)

A pioneer representing New Zealand. He is the world's only legendary winemaker to have won the unprecedented "Best Pinot Noir Award" four times at an international competition in London.

Jen Parr (Co-Winemaker)

A talented winemaker who joined in 2015. Originally from the US, she has extensive experience both domestically and internationally and has been awarded New Zealand's "Winemaker of the Year" – a truly remarkable talent.

Four Vineyards, Each with Distinct Personalities

Valli primarily produces the "king of red wines," Pinot Noir, along with white wines such as "Chardonnay," "Pinot Gris," and "Riesling." The four regions (vineyards) they manage each possess completely different characteristics.

Gibbston

Characteristics

A very cool location where grapes ripen the slowest.

Taste

Slow ripening results in an elegant, refined, complex, and delicate flavor. A rare "orange wine" is also produced here.

Bannockburn

Characteristics

Only 20km from Gibbston, but a warmer area.

Taste

Produces powerful wines with deep color, intense fruitiness, and a moderate astringency that forms the backbone.

Bendigo

Characteristics

A warm vineyard that consistently receives good sun exposure and retains heat.

Taste

Described as a "friendly beast," it is characterized by its rich, full-bodied, and voluminous flavor.

Waitaki

Characteristics

A new region established in 2004. It has limestone soil, similar to the prestigious Burgundy region in France.

Taste

Characterized by a fragrant aroma, like perfume, crisp, clear acidity, and minerality. The Chardonnay, in particular, is considered exceptional.

About the Waitaki Valley Region

The Waitaki Valley is located 40km from the Pacific Ocean, characterized by its mountainous terrain.

This region stretches approximately 20km along the Waitaki River, with its north-facing slopes being highly suitable for viticulture. The climatic conditions are similar to Central Otago.

What is particularly noteworthy is its unique soil composition. Well-drained high river gravels and ancient limestone layers are deposited alternately, which imparts distinctive flavors to the wines of this region.

Waitaki Valley wines retain the typical characteristics of the Otago region, but the unique terroir of this area is reflected in the wine, giving it a distinctive personality.
