Elegant and mineral

Chardonnay is a grape variety known for its versatile character. It is characterized by the variety of styles that are created depending on the region of origin and the intentions of the winemaker. Among these, the most common style is "barrel Chardonnay." Barrel aging adds vanilla and smoky nuances to the wine, resulting in a complex, rich flavor.

New Zealand Chardonnay is also often made using fruity grapes with a hint of oak aromas. Its fruity flavor combined with the richness of the oak is loved by many.

However, this wine is a Chardonnay that focuses on the inherent power of the fruit.

This Chardonnay does not rely too much on the aroma of the oak, but instead maximizes the power of the grapes themselves, yet still boasts a complex flavor that is anything but simple.

First, let's take a look at the manufacturing process.

The hand-picked grapes are gently pressed and fermented in two types of wooden barrels, large and small, with wild yeast. The wine undergoes malolactic fermentation to soften the acidity, and then ages in the wooden barrels for 11 months. It is then transferred to stainless steel tanks and aged on the lees for another four months before being bottled without fining.

The key to this production method is that after fermentation and aging, the wine is further aged in stainless steel tanks .

While most Chardonnays undergo the process of "barrel fermentation → barrel aging" or "stainless steel tank fermentation → barrel aging," this wine is transferred to a stainless steel tank after barrel aging and continues to age there.

This process allows the wine to bring out its natural fruitiness and complexity rather than accentuating the oak aromas.

When Trinity Hill winemaker Warren Gibson visited Japan recently, he told us the following story about this wine.

"People who drink this wine often say, 'The aroma of the oak is wonderful.'

But every time that happens, I think, 'Huh? Did I do something wrong with the manufacturing method?'"

Warren joked, "Because the grapes at Gimlet Gravels have such great potential, we intentionally kept the oak aroma to a minimum for this wine. We let it age on the lees to really bring out the flavor. This is the Chardonnay we want to make."

Taste and pairing suggestions

The aroma and flavor are surprisingly complex , with fresh fruit notes of plum and lime , and a mellow acidity that spreads across the palate.

The aftertaste has a minerality reminiscent of seashells and a hint of nuts , giving the overall flavor a fruity yet very deep taste.

Recommended pairings

  • Asparagus and ricotta salad
  • Scallop carpaccio (served on chicory boats)
  • Sautéed sea bass (with dill sauce)
  • Fried oysters

Personally, I think it goes better with dishes that don't use a lot of butter or cream.

Dishes prepared using methods that bring out the flavor of the ingredients will be a perfect match for the appeal of this Chardonnay.
