A delicious natural flavor

It's Sauvignon Blanc, but somehow it's comforting.

This Sauvignon Blanc from Pyramid Valley has a completely different profile from the more citrusy SB.

It's a type of white wine that spreads its flavor gradually, and although it's not flashy, you can't stop drinking it. The more you drink it, the more it "sinks into your soul."

Organic grapes selected from two fields

The producer is Pyramid Valley, a master of natural wines.

Two vineyards in North Canterbury:
One is gravelly (Glasnevin Gravel) and the other is clayey (Omihi Clay).
Taking advantage of the differences in soil, the balance of structure and flavor is exquisitely constructed.

Moreover, both fields are certified organic (BioGro) .
While valuing dialogue with nature, the construction is solid and skilled.

Winemaking is "deliberately not overly involved"

After pressing, the sediment is allowed to settle naturally for a few days and then fermented with natural yeast .
70% of the wine is fermented in concrete tulip tanks and 22% in old barrels.
The remaining 8% is accented with skin fermentation .

In addition, it undergoes 100% malolactic fermentation and 6 months of sur lie (aging on the lees) .

The result is a mellowness and richness that is unusual for Sauvignon Blanc.
At the same time, it retains the natural freshness of the grapes.

Tasting: Golden color with a hint of lemongrass

The colour is a slightly deep golden lemon colour .
Swirl the glass and you'll discover subtle aromas of wildflowers, lemongrass and dried herbs .

It has an incredibly soft texture, with a rich flavor that spreads throughout your mouth .
At the heart of the flavor is a gentle umami and a hint of bitterness .
The whole is supported by a crisp acidity that tightens it up.

The aftertaste is long and gradually makes you salivate...in other words, you won't be able to stop taking one more sip.

It's best to pair it with rich dishes.

This wine is actually made using an oxidative brewing style .
It's more than just a "white wine for salads."
It also pairs very well with rich, warm dishes .

Here are some recommended pairings:

  • Roast chicken + herb & lemon butter sauce → The aroma of lemon and butter combines with the lemongrass of the wine

  • Sautéed pork + mustard cream sauce → The aroma of mustard and the herbaceous and savory flavor of wine resonate together

  • Nut, fennel and orange salad → The bitterness and spice of the wine blends well like a dressing.

  • Matured goat cheese (Sainte-Maure, Crottin de Chavignol, etc.)
    → The intersection of saltiness and acidity doubles the flavor.

Pyramid Valley Vineyards is located in the rolling hills of the Canterbury region of New Zealand's South Island. The cool breeze from Pegasus Bay, the starry sky, and the pastures with sheep - these are scenes that anyone who loves New Zealand will feel nostalgic about.

Winemaking that respects the power of nature

This winery was founded in 2000 by Mike and Claudia Wersching. Based on their belief that "let the land speak for itself in the wine," they practice biodynamic farming, which does not use any chemicals. The fields are cultivated in accordance with the rhythm of the moon, and fermentation is carried out with natural yeasts rather than cultured yeasts in the winemaking process. Human hands are only there to "guide" nature, drawing out the power and terroir inherent in the grapes themselves to the fullest.

The challenge of a new generation

Currently, Steve Smith MW, a leading New Zealand winemaker, and Brian Sheth, an American businessman, have taken over the winery and expanded the vineyards to Central Otago. The Pinot Noir and Chardonnay, which make the most of the unique characteristics of each land, have been highly praised by wine magazines around the world. One cuvée has even received a high score of 97 to 98 points from Vinous.

About North Canterbury

North Canterbury is a notable wine-producing region on the east coast of New Zealand's South Island. The cool, dry climate, abundant sunshine, and long growing season allow Pinot Noir, Chardonnay, Riesling, and other grapes to be grown at high quality. The diverse soils, including limestone and clay, also give the region's terroir its unique character.

This region is home to many small, family-run wineries that take an artisanal approach to winemaking. The Waipara Valley is known for its excellent Pinot Noir and Riesling wines, thanks to its mild microclimate and soil characteristics. The Canterbury Plains also feature flat land cultivation.

North Canterbury is currently attracting worldwide attention as a premium wine producing region.
