Otago Pinot Noir with Multi-layered Umami
From Central Otago, New Zealand's southernmost wine region.
Made using some whole-bunch fermentation, this wine boasts a complex aroma and multi-layered umami, with a very long finish.
It presents an overall refined impression.
Duck meat is a perfect pairing. Chicken and mushroom hot pot would also be a good match.
Mackerel simmered in miso or sea bass with tomato sauce also pair well.

Peregrine is an organic winery in Central Otago.
They don't use synthetic fertilizers on their grapes, instead relying on compost made from grape pomace and the manure of livestock grazed on their property, among other local materials. This approach strengthens the grapes' drought resistance, increases root surface area, and enhances the soil's influence on fruit flavor.
Their vineyards are located in three sub-regions: Bendigo, Gibbston, and Pisa, and they craft wines that leverage the unique characteristics of each.
The winery's name is derived from the falcon (karearea in Maori), which is also featured in their logo. The stylish design reflects the winery's character.
They also boast a beautifully designed cellar door that captivates visitors.

About the Central Otago Region
Central Otago, New Zealand's southernmost wine region, is renowned for its Pinot Noir, often referred to as one of the "world's three great Pinot Noir regions," alongside Burgundy and Oregon.
Beyond Pinot Noir, the region focuses on cultivating aromatic white grape varieties. Central Otago is unique among NZ's wine regions for its semi-continental climate, characterized by significant diurnal temperature shifts, cool temperatures, and very dry conditions.
