This Chardonnay, produced by Pegasus Bay, a prestigious winery in New Zealand's South Island, is fermented with wild yeast and aged for 12 months in oak barrels. It is an exquisitely mellow wine with a rich oak aroma.

Be sure to try dishes that use butter and cream, such as butter-grilled salmon or sautéed pork with cream sauce.

This is a rich Chardonnay with an excellent balance of fragrant oak nuances and ripe fruit.

Chardonnay is a variety of grape that is said to have little distinctive aroma, so barrels are sometimes used to compensate for this. By aging the wine in a barrel, the components of the barrel are gradually transferred to the wine, adding complexity to the flavor.

Aged in oak barrels for 12 months, this wine also has a strong oak aroma.

At the same time, it also has a strong aroma reminiscent of high-sugar fruits such as white peach, pear, and apricot jam.

Just bring your nose close to the glass and you'll be greeted by a powerful aroma!
It's almost rude to call Chardonnay a grape with little character (laughs).

The taste is also beautiful, reminiscent of ripe stone fruit, with a clean acidity. The fact that the acidity remains strong despite the richness is proof that the grapes themselves have been slowly aged. The alcohol volume is a solid 13.5%, but this clean acidity holds it all together very well.

Then, the oaky nuances reminiscent of brioche spread through the nose and linger as a long aftertaste.

However, surprisingly, it's not the barrel that holds the whole thing together, but the fruit.

I think what makes this wine so great is that it still has the aroma and flavor of the barrel, yet the fruit is dominant.

Important points to remember when drinking

Chardonnay that has been aged in barrels does not release its aroma easily, so it is best not to chill it too much.

If you take it out of the refrigerator just before drinking and put it in water (not ice water), you can enjoy it slowly.

Recommended pairings

A wonderfully rich Chardonnay like this would be perfect with dishes that feature creamy sauces.

Any meat, such as pork, beef, or chicken, is fine, or fatty fish dishes are also recommended.

For dishes such as poached or meunière, a strong hint of butter will go better with the dish.

This is a wine with great potential, so be sure to spend some time and money on the ingredients and pair it with something a little more luxurious!

Pegasus Bay is a winery that represents Waipara, a wine region in the Canterbury region.

Founded in 1986 by neurologist, wine writer, and wine judge Ivan Donaldson, he initially started the winery with his wife Christine, but now the winery is run by the entire family, including their sons.

They cultivate grapes using the most natural methods possible, without using unnecessary pesticides or herbicides, and employ many staff members to perform the meticulous manual work, ensuring high-quality cultivation management.

About the Canterbury/Waipara region

Canterbury/Waipara is located on the east coast of New Zealand's South Island and is characterized by a cool, dry climate.

North Canterbury, which is the country's largest plain, is also one of the world's leading lamb producing regions, and the wineries scattered throughout the region offer a wide variety of wines.

Waipara, which can be reached on a day trip from Christchurch, produces premium wines such as Riesling and Pinot Noir and is a popular tourist destination.
