Special Edition Sauvignon
I like New Zealand Sauvignon Blanc, but I'd like to try something other than the standard "fresh and fruity" type.
This "Mahi Arias Sauvignon Blanc" is perfect for such people!
Located in Marlborough, New Zealand's largest wine-producing region, Mahi Winery produces unique wines that are handmade in a way that sets them apart from many other big-production wines.
The grapes are grown organically, harvested by hand, and fermented naturally using wild yeast. Mahi wines are made through these laborious processes that set them apart from industrial wines.
Mahi means "handmade" or "craft" in Maori, and this wine is truly like a craft, created by the owner Brian Bicknell's handiwork.

This is Brian Bicknell. After working as a major winemaker in various countries around the world, he created Mahi in Marlborough, a wine that showcases his own unique style.
The biggest difference between Arias Sauvignon Blanc and regular Sauvignon Blanc is that it is barrel fermented instead of stainless steel tank fermented.
This Sauvignon Blanc wine, known as the Marlborough style, has intense aromas of citrus, passion fruit, and cut grass, and is fermented almost entirely in stainless steel tanks under temperature control.
However, this Arias is fermented in French barriques, which are 225 liter French oak barrels.
So what happens? You don't get that intense fruit and herb flavored wine. You get a softer, less overpowering, milder flavor.
The lees, or sediments, formed after the wild yeast fermentation process, are left in the barrels and aged for 15 months. The contact between the wine and the lees enhances the flavor of the wine and adds a fragrant aroma.
After barrel aging, the wine is gently racked and then bottled without clarification to preserve its soft flavor.
The resulting wine is one with a great deal of complexity.
The aroma is reminiscent of tropical fruits such as pineapple, with subtle herbal nuances like chervil.
One sip and you'll notice that this is a wine with a rich flavor.
It has the juiciness of a peach, but also a milky texture and a roasted almond-like aroma (although there's almost no butter or vanilla notes like in a barrel-flavored Chardonnay).
Compared to fresh and fruity Sauvignon Blanc, these "complex" wines tend to pair with a wider range of foods.
In the case of Arias, it goes perfectly with salads, as well as white fish, shellfish, chicken, and pork.
It has a fragrant aroma and flavor that comes from aging, so it stands up to meat dishes.
Furthermore, the crisp acidity that is characteristic of Sauvignon Blanc is clearly noticeable, making it a perfect match for fried foods, stir-fried foods, and other oily dishes.

About the Winery "Mahi"
Mahi is a winery in Marlborough founded in 2001 by Brian Bicknell.
Before moving to Marlborough, winemaker Bicknell had been involved in winemaking in various regions around the world for around 15 years.
When he moved to Marlborough in 1996, most of the wines produced there were blends of grapes from different regions within the region, and the individuality and characteristics of the land were being lost. Furthermore, wineries had become larger, and overseas media had begun to comment that "many wines tasted the same."
However, Bicknell felt that Marlborough's diverse land allowed for the creation of different styles of wine, and he decided to start making wine from single vineyards rather than regional blends.
This was the beginning of the Mahi winery.
The style of wine that Mahi aims for is "not a fruity, fruit bomb-like style, but a wine that places more emphasis on texture and balance, and leaves a satisfying feeling in the mouth."
With a style that sets it apart from Marlborough wines, which are synonymous with "fresh and fruity," this winery expresses the quality and diversity of its wines and can be said to be a leading winery in the region.
The label also features a fern, a plant native to New Zealand, which represents strength, life and growth.
