An elegant Chardonnay that pairs well with Japanese cuisine
Kimura's wines are wines that convey the natural flavor of the wine. Every time I meet him, I feel that he is very polite (as expected from a former hotelier), and I think that his seriousness is reflected in his wines.
Honest and delicate, it effortlessly brings out the characteristics of each variety.
Among the Kimura Cellars wines, this Chardonnay has a mellow taste. The aroma is of peach, apricot, orange peel, and the aroma of butter from the barrels.
It is aged for approximately 10 months in 16% new French oak barrels, but it still retains a lively acidity, resulting in a very well-balanced flavor.
The best food to go with it is probably creamy foods.
It goes perfectly with pasta with cream sauce, cream stew, and cheese gratin.
In terms of Japanese cuisine, it goes well with flounder and conger eel tempura, fish sukiyaki, and tetchiri.
It also matches the combination of seafood and butter, so it would be great with butter-grilled scallops or butter meunière of white fish.
Be sure to try this dish for a slightly luxurious dinner this winter.
About the Winery "Kimura Cellars"
KIMURA CELLARS is a family-run winery run by Japanese owner Shigehisa Kimura.
Kimura studied wine brewing and viticulture in New Zealand and gained experience working in cultivation and brewing at several local wineries before founding Kimura Cellars in Marlborough in 2009.
Based on the concepts of "wine where you can see the face of the maker" and "producers who are close to consumers," we carefully create wine using organic farming methods.
In 2018, they finally started growing grapes in their own fields, and are now focusing even more on organic farming methods.
The Kimura Cellars logo is a cherry blossom representation of the new shoots of the fern (koru), a symbolic plant of New Zealand. The fern is a symbol of New Zealand and represents "new beginnings," "growth," and "harmony."
It seems that Kimura's wines are often enjoyed on special occasions such as wedding anniversaries.
