Winemaker Matt Kirby has worked in the wine industry in France, Australia and New Zealand.
When he started this winery, he chose Chardonnay as his main grape variety.
Chardonnay production in New Zealand accounts for only 6% of the total . Sauvignon Blanc is the predominant variety in the country, and Chardonnay, a very popular variety around the world, is overshadowed.
However, New Zealand Chardonnay has actually been attracting keen attention from core wine fans for some time now.
First, in 1993, Nelson's Neudorf won the Chardonnay category at the World's Best Wine Tasting .
The area planted to Chardonnay has increased, especially in Hawke's Bay, and now many Hawke's Bay Chardonnays are receiving scores in the high 90s from multiple Masters of Wine.
The reputation of some producers producing excellent Chardonnay is slowly spreading, especially in professional circles.
This is where the new winery , Helio, set its sights.
"Hawke's Bay Chardonnay is of incredible quality. Let's let the world know about it."
With that goal in mind, Helio was born.
Now, let's try Chardonnay, Helio's flagship item.
When you pour it into a glass, the first thing that comes to mind is a lime-like citrus flavor . There is also a hint of ripe peach , and you can also clearly sense the aroma of baked bread .
With just one sip, you'll notice the strong citrus acidity in the aroma, as well as concentrated fruitiness like peach and pear .
The aroma of roasted almonds and vanilla from the barrels comes afterwards, and the aftertaste also has a hard element reminiscent of minerals .
It's definitely fruity, but the other elements are just as impressive. And none of the elements are too strong. It's a wonderfully balanced flavor.
This well-balanced Chardonnay can be paired with a wide range of foods.
It goes particularly well with shellfish and seafood.

About the Winery "Helio"
Helio is an up-and-coming winery based in the Hawke's Bay region of New Zealand.
Founders Matt Kirby, Sarah Little and Dave Nash share a passion for producing world-class Chardonnay.
Helio was born when Matt and Dave met while filming the New Zealand wine documentary, A Seat at the Table .
Along with Matt's wife Sarah, former Felton Road winemaker, the three shared a vision to show the world what Hawke's Bay Chardonnay could be.
The winery's name "Helio" comes from the Latin word "Helios," which means sun.
This illustrates why the Hawke's Bay region's unique sunshine conditions are ideal for winemaking - the right amount of sunshine allows the grapes to ripen perfectly, resulting in high quality wines.
Based on the philosophy that the sun is the source of winemaking, Helio is focusing on producing world-class Chardonnay by taking advantage of the favorable climate of Hawke's Bay. This winery embodies the new possibilities of New Zealand wine, and future developments are attracting attention.
About Hawke's Bay
Hawke's Bay is located in the eastern part of the North Island and is characterized by abundant sunshine and a relatively warm climate, and boasts the second largest grape-growing area in Australia.
Hawke's Bay specializes in producing red wines, particularly those made from Cabernet Sauvignon, Merlot, Malbec and Syrah, while fruity Chardonnay is a popular white wine.
The Gimlet Gravels, an area created when what was originally a riverbed was pushed up by an earthquake, is one of Hawke's Bay's important sub-regions.
