The perfect blend of four personalities

On the morning of the harvest, I decided, "This is the moment."

On the morning of the harvest, Kohei Koyama stands in the field and makes a decision. He listens closely to the voices of nature - the sugar content of the grapes, the feel of the leaves, the smell of the air. Then, he decides, "Today is the day," and harvests four types of grapes at once with his friends.

Picked together and fermented together, that's the essence of this wine - a time-honoured technique known as field blending .


What is Field Blend?

While regular wines are vinified by variety separately and then blended together, field blends are made by growing multiple varieties in the same vineyard, harvesting and vinifying them at the same time .

There are no ratios or recipes, and the winemaker relies on the intuition of the vineyard and the winemaker. It is a very analog and intuitive style that captures the expression of the vineyard at that moment in that year in its entirety in the bottle .


Where wine is produced and what varieties it is made from

The setting is Cliffs Vineyard in the Gladstone region of Wairarapa, New Zealand. The vines are 25 years old and are organically grown (certified), but there is no logo on the label.

The grapes used are Viognier, Pinot Gris, Riesling, and Sauvignon Blanc (proportions not disclosed).

Among them, Viognier is fermented with skin contact for two weeks to bring out its spicy and gingery aroma. The other three varieties are mixed and fermented with natural yeast. They are then blended with the Viognier wine. SO2 is used only to a minimum before bottling.

The finished product is a blend of rounded aromas of apple, apricot, white flowers, citrus, guava, herbs, and honey , with a delicate yet deep flavor.

This wine's many different flavours come together in one flavour , which is why it pairs perfectly with a diverse range of dishes.

Creative Japanese cuisine and

  • Fresh yuba and orange salad (citrus dressing) → The umami of the yuba and citrus combine with the aroma of wine.
  • Grilled Spanish mackerel with miso sauce and sudachi citrus → The richness of the miso and the accent of citrus are complemented by a fruity flavor.
  • Scallop and yuzu pepper carpaccio → The subtle spice and umami flavor go well with the hint of ginger.
  • Chilled tomatoes topped with dashi jelly → The savory flavor and sourness are enhanced by the delicate acidity of the wine.

Asian spice dishes

  • Thai gapao rice and banh mi
  • Vietnamese spring rolls + sweet and sour sauce

Western-style appetizer with cheese

  • Grilled seasonal vegetables + Bagna Cauda
  • Chevre or salty cheese with honey

About the Winery "Green Songs"

"Green Songs" is a winery run by Japanese winemaker Kohei Koyama.

After working in the business world in Tokyo and London, Kohei moved to New Zealand in 2011 to pursue a career in winemaking.

He studied grape growing and winemaking at Lincoln University, becoming the first Japanese person to graduate with honors. He then studied winemaking in New Zealand and California, and in 2014 he partnered with Atamai Village in the Nelson region to establish his own winery.

Atamai Village is a community that operates orchards and farms, with the common goal of living a life that places as little strain on the global environment as possible.

Kohei is also the head vineyard manager at URLAR, a winery in Gladstone, Wairarapa. URLAR is owned by Nishi Yoichiro, the eighth generation owner of Nishi Sake Brewery in Kagoshima Prefecture.

Currently, Kohei is mainly active at Gladstone, and is expanding the range of winemaking by further enhancing the Green Songs lineup. We have high expectations for his future success.

About Wairarapa

Wairarapa is located in the southeastern part of New Zealand's North Island, and is easily accessible - just an hour's drive from the capital, Wellington - making it a popular resort destination.

The subregion of this region, called Martinborough, has climate and soil conditions similar to those of Burgundy in France, and is known as one of the world's top producers of Pinot Noir.
