Low-alcohol sweet Riesling

This wine is, in a word , a Riesling that is irresistible for those who like sweet German white wines .
In German terms, it's called Kabinett. A white wine with firm acidity and gentle sweetness.
It has a light, delicate and soft taste, with a wonderful fruity flavour that makes you feel like you are eating a freshly picked apple.
It can be enjoyed chilled on its own, or paired with sweets for a delicious drink.
for example···
・Lemon and berry tart ・Apple pie with Roquefort ・Pound cake with apple compote
It also goes well with the combination of fruit and meat, and will enhance dishes such as chicken saute with mango sauce or pork saute.
It also pairs well with spicy curries such as pork vindaloo and green curry.
This refreshingly sweet white wine is recommended even for those who are not used to drinking wine.
So how exactly is this low-alcohol "The Doctor's Riesling" made?
In recent years, the most commonly used techniques for lowering the alcohol content of wine are scientific methods for removing alcohol, such as reverse osmosis using semipermeable membranes and a device called a spinning cone column (SCC).
But the two doctors at Forest Wines, John and Brigid, didn't choose to go that route.
"Scientifically removing the alcohol inevitably destroys the flavor. If it doesn't bring out the best in Marlborough wine, then we shouldn't use that method."
With this in mind, after much trial and error they arrived at the idea of "selective leaf removal" in the vineyard, rather than tampering with the finished wine.
What exactly is it like?
Selective leaf removal is a method of deliberately cutting off young grape leaves to reduce the amount of photosynthesis, thereby controlling the amount of sugar produced by the grapes.
Although the fully ripe grapes have little sugar, they still contain a good amount of the compounds that give wine its aroma, obtained from the abundant sunlight.
By using these grapes, it is possible to produce low-alcohol wine that is comparable in quality to regular wine.
"DOCTORS'" is a unique drink that combines low alcohol content with great flavor.
Enjoy this new New Zealand style with a Sauvignon Blanc from the same series.
Winery " About Forest Wines

Image source: Forrest Wines, home of The Doctors
Forest Wines has been a strong presence in the New Zealand wine industry for over 30 years and is based in the Wairau Valley in Marlborough, New Zealand's leading wine region.
This land has been home to the Forest family for generations and is a place they cherish. Their winemaking is tied to their deep love for the land and focuses on making the most of the region's natural environment.
Founders John and Brigid Forrest had successful careers in scientific research and medicine, but in the late 1980s, at a time when New Zealand's wine industry was still in its infancy, they made a brave career change and returned home to set up a winery.
Their winemaking philosophy combines scientific knowledge with the power of nature, resulting in their first vintage, a trophy-winning Merlot Rosé, in 1990, and they have continued to produce innovative wines ever since.
Their wines are highly regarded by wine lovers and experts around the world, particularly in the Marlborough region where the wine industry is expanding, and the strong commitment that comes with being a family business is reflected in their unique, high-quality products.
Unlike large wineries, we produce small quantities but maintain high quality, pursuing both tradition and innovation.
The winery is now run by his daughter, Beth Forrest, who is bringing a breath of fresh air to the winery, using the knowledge and skills she gained at the University of Adelaide in Australia. She aims to preserve the family tradition while also creating wines that meet modern needs.
Under Beth's leadership, the winery is producing more diverse and distinctive wines than ever before and is poised to continue its legacy for generations to come.
Their products have won numerous awards in domestic and international competitions, and their high quality is the result of a balance between the natural environment and a scientific approach. Their consistent quality control and respect for nature are embodied in every bottle.
Dr. John Forrest (Founder)
Born and raised in Marlborough, New Zealand in 1955, Dr. John Forrest earned a PhD in neurophysiology before returning to Marlborough as a wine grower in 1988 and founding Forrest Wines with his wife Brigid. He pioneered low-alcohol wines and screw caps, opening up new possibilities for New Zealand wine.
Dr. Brigid Forrest (Founder)
While involved in the operation and management of the winery, Dr. Brigid Forrest has also been a practicing physician for over 30 years, specializing in pregnancy and childbirth care in general practice, as a community geriatrician providing physical and mental health care for older adults, and in hospice care, helping people live fulfilling lives until the end of their lives.
Beth Forrest (General Manager/Winemaker)
Beth Forrest holds a Master's degree in Enology from the University of Adelaide and brings a wealth of knowledge, youthful energy, and a passion for winemaking to Forrest Wines. She continues to contribute to the development of Forrest Wines by inheriting an innovative and cutting-edge approach, sometimes incorporating theories like those of a "mad scientist."
About Marlborough
Marlborough is the heart of New Zealand's wine region.
Marlborough has ideal natural conditions for grape growing, such as abundant sunshine and large temperature differences throughout the day, and produces over 80% of New Zealand's wine.
Among them, Sauvignon Blanc, characterized by its crisp acidity and overflowing fruitiness, boasts an overwhelming production volume and is loved worldwide for its unique character. In red wine, Pinot Noir, with its rich berry fruit flavor, is also popular.
