Perfect Marlboro Style

This is a white wine that can be described as "perfect Marlborough style." It is a Sauvignon Blanc with a distinct passion fruit aroma and flavor.

The quintessential Marlborough method is carried on by Beth Forrest, second-generation winemaker at family-run Forrest Wines.

Forest Wines was founded in 1990 by his parents, who were both doctors and scientists.

Since then, the company has remained family-run in Marlborough, a region dominated by large-scale farms, and has continued to produce high-quality wines with a concentrated flavor.

Their daughter, Beth, who returned to Australia after studying viticulture and oenology at the University of Adelaide, has now taken over from her parents and is serving as both general manager and winemaker.

In addition to the techniques he inherited from his parents, he is incorporating the latest theories to take the winery to the next level.

The Sauvignon Blanc we are introducing today is a signature product that could be considered the most important item in the Forest family's portfolio.

The vineyards are located in the Wairau Valley, which is gravelly and extremely well-drained, even within Marlborough. The vines send their roots deep into the soil in search of nutrients and moisture, giving the wine a truly concentrated flavour.

The fully ripe grapes are harvested by machine early in the morning while it is still cool. Once they are delivered to the winery, they are immediately pressed and cooled. To preserve the aroma, the wine is fermented in stainless steel tanks at a controlled temperature.

After fermentation, the wine is left on the lees ( sur lie ) to give it a creamy texture, and then blended with a small amount of barrel-aged wine before bottling and shipping.

Now let's actually pour it into a glass.

The nose is very rich with passion fruit , grapefruit , guava and cut grass (smelling like freshly cut grass).

With one sip , you can taste the strong acidity . The rich flavor is also strong. The finish has a strong mineral feel . The gorgeous impression you get when you smell it lingers long after it goes down your throat.

While the Wairau Valley 's characteristic tendency to have strong tropical fruit flavors is at the forefront, I think the wine also has the depth and mellowness that comes from being sur lied .

This high-quality wine has a refreshing citrus flavour that is perfect for a refreshing mood.

Please be sure to serve thoroughly chilled.

What food goes well with it?

Seafood dishes such as white fish carpaccio and aquapazza are a great companion.

Also, if you are using chicken dishes such as sautéed chicken or yakitori, try salt and herb salt. It also goes well with pasta with pesto sauce.

Any dish will go much better if you add a bit of citrus acidity, such as a squeeze of lemon, at the end.

The winery is now run by his daughter, Beth Forrest, who is bringing a breath of fresh air to the winery, using the knowledge and skills she gained at the University of Adelaide in Australia. She aims to preserve the family tradition while also creating wines that meet modern needs.

Under Beth's leadership, the winery is producing more diverse and distinctive wines than ever before and is poised to continue its legacy for generations to come.

Their products have won numerous awards in domestic and international competitions, and their high quality is the result of a balance between the natural environment and a scientific approach. Their consistent quality control and respect for nature are embodied in every bottle.

Dr. John Forrest (Founder)

Born and raised in Marlborough, New Zealand in 1955, Dr. John Forrest earned a PhD in neurophysiology before returning to Marlborough as a wine grower in 1988 and founding Forrest Wines with his wife Brigid. He pioneered low-alcohol wines and screw caps, opening up new possibilities for New Zealand wine.

While involved in the operation and management of the winery, Dr. Brigid Forrest has also been a practicing physician for over 30 years, specializing in pregnancy and childbirth care in general practice, as a community geriatrician providing physical and mental health care for older adults, and in hospice care, helping people live fulfilling lives until the end of their lives.

Beth Forrest holds a Master's degree in Enology from the University of Adelaide and brings a wealth of knowledge, youthful energy, and a passion for winemaking to Forrest Wines. She continues to contribute to the development of Forrest Wines by inheriting an innovative and cutting-edge approach, sometimes incorporating theories like those of a "mad scientist."
