Perfect Marlboro Style
This is a white wine that can be described as "perfect Marlborough style." It is a Sauvignon Blanc with a distinct passion fruit aroma and flavor.
The quintessential Marlborough method is carried on by Beth Forrest, second-generation winemaker at family-run winery Forrest Wines.
Forest Wines was founded in 1990 by his parents, who were doctors and scientists.
Since then, the company has remained a family-run operation in Marlborough, a region dominated by large-scale farms, and has continued to produce high-quality wines with a concentrated flavor.
Their daughter Beth, who returned to Australia after studying viticulture and enology at the University of Adelaide, currently follows in her parents' footsteps and serves as both general manager and winemaker.
In addition to the techniques he inherited from his parents, he is incorporating the latest theories to take the winery to the next level.
The Sauvignon Blanc we are introducing this time is a signature product and can be said to be the most important item in the Forest family's portfolio.
The vineyards are located in the Wairau Valley, which is a region with a lot of gravel and excellent drainage, even within Marlborough. The vines send their roots deep into the soil in search of nutrients and moisture, giving the wine a truly concentrated flavor.
The fully ripe grapes are harvested by machine early in the morning while it is still cool. Once they are delivered to the winery, they are pressed and cooled immediately. To preserve the aroma, the wine is fermented in stainless steel tanks while controlling the temperature.
To give the wine a creamy texture, it is left on the lees after fermentation ( sur lie ) and then blended with a small amount of barrel-aged wine before bottling and shipping.
Now let's actually pour it into a glass.
The nose is extremely rich with passion fruit , grapefruit , guava and cut grass (resembling the scent of freshly cut grass).
With one sip , you can taste the strong acidity , the rich flavor, and the strong minerality in the finish. The gorgeous impression you get when you smell it will last all the way down your throat.
While this wine brings to the forefront the Wairau Valley's characteristic tendency to have strong tropical fruit flavors, I think it also has the depth and mellowness that comes from being sur lied.
A refreshing citrus flavour that is perfect for invigorating and refreshing. This is a high-quality wine with a true Marlborough style taste.

What food goes well with it?
Seafood dishes such as white fish carpaccio and aqua pazza are perfect companions.
Also, for chicken dishes such as sauteed chicken and yakitori, use salt + herb salt. It also goes well with pasta with pesto sauce.
Any dish will go much better if you add a bit of citrus acidity, such as a squeeze of lemon at the end.

Dr. John Forrest (Founder)
Born and raised in Marlborough, New Zealand in 1955, Dr. John Forrest returned to Marlborough as a wine grower in 1988 after earning his PhD in neurophysiology, and founded Forrest Wines with his wife Brigid. He is a pioneer of low-alcohol wines and screw caps, opening up the possibilities of New Zealand wine.

While working and managing the winery, Dr. Brigid Forrest has also worked as a physician for over 30 years, specializing in pregnancy and childbirth care in general practice, as a community geriatrician providing physical and mental health care to the elderly, and in hospice care, helping people live fuller lives until the end of their lives.

Beth Forrest has a Master's degree in Enology from the University of Adelaide and brings a wealth of knowledge, youth and passion for winemaking to Forrest Wines. She continues to contribute to the development of Forrest Wines by inheriting an innovative and cutting-edge approach, sometimes incorporating theories like those of a "mad scientist."
