Concentrated Pinot from the Oldest Vineyard

There's a vineyard that was first cultivated in the rolling hills of Waipara.
It's about a 50-minute drive from Christchurch. This area is called "Netherwood," located 5km north of the restaurant on Reeces Road.
Grapes were planted in Netherwood in 1986. The planter was Daniel Schuster, known as a pioneer of Waipara. He planted the grapes with Russell Black, the founder of Black Estate.
1986 was the same time that Pegasus Bay, a prestigious winery in Canterbury, planted their grapes. Since then, Black and Pegasus Bay have competed and worked together to promote Waipara wines. It is no exaggeration to say that these two wineries are the history of Waipara wine itself.
Incidentally, the current owner of Black Estate lives in Netherwood and has a winery facility and private tasting room near the vineyard.
Cultivation and Winemaking
The soil is an ancient sedimentary rock called "Waipara Greensand." This stratum, composed of sandstone, mudstone, and a small amount of clay, is said to have formed at the same time as the sandstone in Champagne and Kent.
The Netherwood vineyard has not been irrigated since it was planted. The roots extend deep into the earth in search of water. The yields are extremely low, and as a result, each berry has a concentrated fruit flavor.
The vineyard has BioGro certification and is managed biodynamically under Demeter certification.
Winemaking is as simple and natural as possible, with minimal human intervention.
Grapes harvested by hand are fermented with only wild yeasts, and no fining or filtration is performed. The inherent characteristics of the fruit and soil are directly reflected in the bottle.
Tasting Notes
Deep ruby red. It appears slightly cloudy rather than sharply clear.
When poured into a glass, red fruits like pomegranate and plum spread out. From deep within, there's the refreshing scent of cedar and a hint of bitter licorice. It's a complex aroma that feels somewhat serene.
On the palate, it becomes clear that this wine is not one that "pursues fruitiness." The main character is not the fruit, but rather the complex elements of herbs and spices that first stand out. Behind that is the gentle fruitiness of berries and cherries, providing support.
The acidity runs firmly from beginning to end. The tannins are fine and powerful. The finish, accompanied by spice, is very long.
This is a "complex Pinot" style, completely different from the typical bright New Zealand Pinot.
Decanting / Aging
If you're enjoying it now, decanting is recommended. Allowing it to breathe for about 30 minutes will open up the closed aromas and make the taste much smoother.
Its true value will emerge in 5-10 years, or even longer. As the complex elements develop and eventually come together, it will be adorned with an ineffable aged aroma reminiscent of truffles, forest undergrowth, and humus.
It's a wine that would be good to have a bottle of in your cellar for a special occasion. Or, it's suitable as a gift for a loved one who appreciates wine, especially Pinot Noir.
Pairing
Its elegant structure and complex aromas pair well with dishes rich in umami.
- Beef fillet steak (simple salt and pepper to bring out the flavor of the meat)
- Beef stew (the rich sauce complements the wine's complexity)
- Bone-in chicken and mushroom tomato stew (the umami from slow cooking is an excellent match)
- Sukiyaki (the sweet and savory umami of soy sauce and sugar enhances the Pinot Noir's fruitiness)

"Hands-Off" Winemaking

The winemaker, Nicholas Brown, was named New Zealand's Winemaker of the Year in 2022 . His philosophy is "to interfere as little as possible." They don't use artificial yeasts; instead, fermentation occurs naturally with wild yeasts from the vineyard. Also, they don't filter to clarify the wine, so the pure, energetic flavors inherent in the grapes are bottled as they are .

On the premises, there is a famous restaurant that annually receives the highest rating of "two stars" from a prestigious local guide . Here, you can enjoy dishes made with fresh organic ingredients from their own vineyards and local farms, paired with their proud wines . There is also a B&B where you can stay among the vineyards, offering a special experience of having the quiet night vineyards all to yourself after the staff have gone home .
