Steep slope Pinot is thick and elegant

Located about an hour's drive from Christchurch on New Zealand's South Island, Waipara Valley is home to a collection of small but unique wineries. The Dam Steep Vineyard, where the grapes for this wine are grown, is located on a steep slope in the northeast.
The area is 140-180m above sea level. The slope faces northeast and receives plenty of sunlight. The clay soil is underlain by limestone and sandstone, making for excellent drainage.
The unique character of this land gives Dam Steep's wines a power and structure not found in other Black Estate Pinots.
The Pinot Noir vineyard, planted in 1999, is BioGro certified. It is planted at a high density of 5,000 vines per hectare using organic and biodynamic farming methods. There is no irrigation. All vines are own-rooted.
The grapes have deep roots in a harsh environment, which allows us to harvest concentrated fruit every year.
Wine making
The harvested grapes are fermented using only native yeast, without the use of any additives such as added sugar or acid.
After fermentation, the wine is aged for approximately 12 months in old French oak barrels, is unfined and unfiltered, and receives minimal SO2 at bottling.
The minimalist brewing process allows the unique character of the Dam Steep vineyard to be brought out.
Tasting Comments
The color is a deep ruby red, with some cloudiness.
The aroma seems to become more appealing after a little more time has passed since it was first poured. Aromas of black fruits such as blueberries and plums emerge, followed by complex nuances of licorice and dried herbs.
When you put it in your mouth, the concentrated fruit flavor spreads.
The tannins are finely textured yet still present. There are certainly fruity elements, but the impression is one of earthy and herbal nuances. The aroma that returns to the nose after swallowing is also strong, and the finish is long and lingering.
Decanting will allow the aroma to develop more fully. If you don't decant, you can enjoy the changing aroma for 2-3 days after opening.
About aging
This wine is delicious to drink now, but will really come into its own with at least five years of aging.
I have actually tasted a wine that had been aged for over 10 years, and the various elements of the wine, such as fruit, tannins, acidity, and minerals, blended beautifully, resulting in a complex and deep flavor.
Yet the vines retained their vibrant energy, and I could clearly see the great potential this field has.
Pairing suggestions
The powerful tannins and concentrated fruit flavors complement meat dishes perfectly, such as beef stewed in red wine, sautéed lamb, and smoked duck.
It goes particularly well with dishes that have a rich fatty flavor, enhancing the richness of your meal.
- Braised beef shank in red wine: The concentrated fruit flavor and the savory taste of slowly simmered meat come together beautifully.
- Herb-sautéed lamb chops: The unique flavor of lamb and the aroma of dried herbs blend naturally together.
- Braised pork: The sweet and spicy soy sauce-based sauce and tannins create an exquisite balance.
- Genghis Khan: The fragrant mutton and the flavor of black fruits complement each other.
Of all the Black Estate Pinots, Dam Steep has the most powerful concentration and structure.
"Home" is attractive for its well-rounded taste, "Netherwood" has extremely complex elements, and "Dam Steep" is concentrated. It will be fun to try and compare the individual characteristics of each!

Black Estate is a family-run winery located in North Canterbury, on New Zealand's South Island. Located about an hour's drive from Christchurch, the resort is surrounded by beautiful vineyards.
"Natural" grape cultivation that respects the land
The biggest feature of this winery is that it thoroughly practices organic and biodynamic farming methods, which maximize the power of nature. They do not use any chemical fertilizers or pesticides. Instead, they care for the fields as if they were living creatures, letting their own cows and sheep from the neighborhood graze on the fields to eat the weeds and using their droppings as natural fertilizer. Another thing they are particular about is that they perform their farming in accordance with the rhythm of celestial bodies such as the phases of the moon. .

The Black Estate has three vineyards, each with its own unique character. .

"Do Nothing" Winemaking

Winemaker Nicholas Brown was named New Zealand's Winemaker of the Year in 2022. His philosophy is to "do as little as possible." He doesn't use any artificial yeast, and ferments only with natural yeast found in the vineyard. He also doesn't filter the wine to make it clear, so the pure, energetic flavor of the grapes is bottled as is. .

The premises include a famous restaurant that has been awarded the highest rating of two stars by the prestigious local guide every year. Here, you can enjoy dishes made with fresh organic ingredients from their own fields and local farms, paired with their signature wines. There is also a B&B where you can stay in the vineyard, offering the special experience of having the vineyard all to yourself in the quiet evenings after the staff have gone home. .
