Winemaking
The grapes are hand-picked and sorted by machine and by hand. The wine is aged on the lees for three months and is unfiltered and unfined.
Aroma and Flavor
It has a refreshing flavor of citrus fruits such as lime and lemon, berries such as raspberry, and jasmine, and the taste is very dry. The alcohol content is a relatively low 11.5%, so you can enjoy it lightly and refreshingly.
However, the taste is by no means monotonous. The slight bitterness and minerality that remains in your mouth after swallowing is very pleasant, inspiring you to enjoy it alternately with your meal.
Pairing
It matches a wide range of dishes, including appetizers, seafood, and meat dishes, but it particularly goes well with herb-sauteed salmon and spicy grilled chicken.
It also goes well with Korean and Chinese cuisine. The wine will not get in the way of appetizers with a mild flavor, and it will help to reduce the oiliness of slightly oily dishes.
About Collaboration Wines
The owner and winemaker is female winemaker Julianne Broden.
He graduated with a degree in Wine Science, Winemaking and Viticulture from the Eastern Institute of Technology (EIT) in 1997 and gained winemaking experience working at various wineries in Napa Valley and New Zealand.
While working as a winemaker at Pask Winery in Hawke's Bay, he founded Collaboration Wines in 2010, releasing four barrels of his own original wine that same year.
As the winery name suggests, Collaboration Wines does not own its own vineyards, but instead collaborates with specific grape growers in Hawke's Bay to produce wines. The beautiful wine labels are based on original works by artist Angela Tyrrell, who rented a room during her time in Napa Valley.
